Paris Butter Making July 2022 As a nutritionist I believe whole foods such as butter are so much better for the body than man made foods such as margarine. With the rising costs of food, why not try making your own butter? It's so easy!! Here's how... Pour 36% or higher cream into the bowl of a stand mixer and whisk the cream until the mixture thickens. You can do this by hand with just a whisk and bowl (that's how we did it in this class) but it will take a few more minutes and a lot more muscle power! After several minutes the whipped cream will start to yellow and more of the fat solids will separate from the liquids and you'll see clumps of butter fat quickly form, leaving buttermilk in the bottom of the bowl that you can save for another recipe so drain that off! Strain as much of the buttermilk liquid and then pour ice cold water over your butter. Pressing your butter into the cold water, allowing the cold water to solidify your butter even more. Drain the water and repeat this 2x until you can form a ball with your butter. When you think you have all the excess water out, SMACK your butter with a spatula to get just a bit more moisture out of your butter, this will make the butter stay solid so smack it for a minute and drain as you do! At this point you have have smacked the water out and you have butter! Isn't that amazing? Now you can add in things like pure sea salt, garlic powder or even crushed but the garlic might turn green a bit, and herbs such as fun blends such as Herbes de Provence (I am in France after all) Creating flavoured butters is part of the fun, or serve in its pure form as is. If you want to shape your butter into a rectangle now is the time or you can purchase butter molds for interesting designs or even use cookie cutters or playdough molds! Be creative! Cooling your butter for a few minutes in the fridge helps you get the butter out but you can leave this in the fridge longer as well. You could make such fancy little butters for a dinner party but I guarantee you this butter will be the BEST you have ever tasted! Wasn't that EASY? I won't be buying regular butter again! Look for sales on 1L containers of 36-38% cream (make friends with someone who has a cow for the real stuff) and make your own. With a pound of butter costing $5-6 or more this is a cheaper and tastier alternative! Enjoy!! Thank you for following my journey to writing a book series!
