July 31 - How to eat spinach properly and minimize oxalates Week 4 housesitting in France and doing more cooking! Here’s a shocker…NEVER eat raw spinach! Spinach contains oxalates which actually prevent the absorption of magnesium, calcium, iron and other minerals. Raw spinach can cause excessive gas, bloating and cramps because our body cannot metabolize that much all at once and if you suffer from digestive issues like IBS spinach is not going to help if eaten raw! Never heard of oxalates? They are found in plants and have been linked to health problems. If you have had too many oxalates you could be experiencing recurring kidney stones, cloudy urine, grainy poop and inflammation of the gums just to name a few. On the other side, Spinach is loaded with good things like fiber and magnesium and adds bulk to stool through the digestive tract which helps relieve constipation. STEAM or BLANCH YOUR SPINACH Just steam lightly to preserve the nutrients, do not boil your spinach to death and kill all the good nutrients! By steaming or blanching spinach it decreases the oxalate content by 30%! Just remember to dispose of that spinach water that will leach out when steaming! Another trick is to taking a calcium citrate supplement with your spinach will bind with the remaining oxalates so make sure you have those handy or squeeze some lemon juice on your steamed spinach to increase the excretion of oxalates! Who knew spinach was so complicated?? So skip the raw spinach salad, skip the spinach in smoothies! Just steam for the benefits and leave the oxalates behind!
